Ingredients

  • 1/4 c. raw rice
  • 1 or 2 slices rye bread
  • 1 or 2 slices white bread
  • 2 1/2 c. milk
  • 1/4 c. margarine or butter
  • 3 eggs
  • 2/3 c. sugar
  • 1 tsp. vanilla
  • 3 Tbsp. maple syrup
  • 1/4 tsp. nutmeg
  • 1 tsp. cinnamon

Directions

Cook rice in 1 1/2 cups water until tender, about 20 minutes, put margarine or butter in while hot so it will melt and a little salt. Tear the bread into pieces and stir in eggs, vanilla,milk, cinnamon, sugar, maple syrup and rice. Sprinkle nutmeg over top. Bake at 350 degrees for 1 hour or more until set. Test for doneness by sticking a knife in and, if still milky, bake some more.
