You could use any sort of mushroom or skip them altogether. The important ingredients are the garlic and ginger.


  • 6 chicken thighs
  • 1 T. chopped ginger
  • 1 T. chopped garlic
  • 3 Shiitake mushrooms, sliced
  • 3/4 c. white wine
  • flour to coat chicken


Roll thighs in flour and brown in mod/hot olive oil. Remove chicken and set aside. Remove most of the fat from pan and saut garlic and ginger for a few minutes. Add wine and chicken, salt and pepper. Cover and cook 20 - 30 minutes or until chicken
