Ingredients
- 2 boxes chopped broccoli, cooked & drained
- 2 eggs, lightly beatened
- 1 c. mayonnaise
- 1 can cream of mushroom soup
- 1 c. grated sharp cheddar cheese
- 1 medium chopped onion
- Dash of salt & pepper to taste
- 1 stick butter, melted
- About 15 Ritz crackers, crushed
Directions
Mix all ingredients except crackers & butter. Turn into 2-qt. casserole dish. Toss Ritz crumbs & butter together (add crumbs to the consistency you'd like). Top this mixture onto broccoli mixture. Bake, uncovered, at 350 degrees for 30 minutes or til nicely browned & bubbly.
