Ingredients
- 1 1/3 c. milk
 - 1/8 tsp. salt
 - 4 TBL. sugar
 - 1 TBL. butter, softened
 - 1 tsp. vanilla
 - 2 eggs
 - 1/2 tsp. grated lemon zest
 - 1 tsp. lemon juice
 - 2 c. cooked brown or white rice
 - Nutmeg, to taste
 
Directions
Preheat oven to 325 degrees. Combine all ingredients except for rice & nutmeg.  Mix well. Add mixture to rice, again mixing well.  Pour into greased baking dish.  Sprinkle with nutmeg.  Bake about 50 minutes, or til firm.

Rice Pudding
