Ingredients:
1 1/3 c. milk1/8 tsp. salt 4 TBL. sugar 1 TBL. butter, softened 1 tsp. vanilla 2 eggs 1/2 tsp. grated lemon zest 1 tsp. lemon juice 2 c. cooked brown or white rice Nutmeg, to taste
Directions:
Preheat oven to 325 degrees. Combine all ingredients except for rice & nutmeg. Mix well. Add mixture to rice, again mixing well. Pour into greased baking dish. Sprinkle with nutmeg. Bake about 50 minutes, or til firm.6-8
