My mother-in-law is from London, so this is something we've been making & enjoying for years.
Ingredients
- 1 c. plain flour
- 1 c. milk
- Pinch of salt
- 2 eggs
Directions
Beat ingredients with fork (it will be lumpy). Remove baked meat from pan, draining off most, but leaving about 5 TBL. drippings. Return pan to oven & raise temperature to 450 degrees. After pan is really hot, add the batter. Bake, uncovered, 20 minutes, or until golden brown. Cut into wedges and serve with gravy.
When cooked, fills a 13"x9" roasting pan
