Additional spices or things like mushrooms can be added as well as the peppers and onions.


  • 1/2 Bushel of tomatoes
  • 1 Pt. oil Olive oil preferred
  • 3 Pounds of onions
  • 2 Garlick buds
  • 8 Cans of tomato paste 6 oz. size
  • 4 Hot peppers
  • 1 1/2 Cup of sugar
  • 1/2 Cup of salt
  • 1 Tbsp. sweet basil
  • 2 Tbsp. ooregano ( heaping)


Grind the peppers and onions. Cook 1/2 hr. in oil.
Cook tomatoes and garlick as for juice. Tomatoes can be scalded and pealed for easy making. Put through a sieve or foley mill. Add the peppers and the oniond to the juice and the rest of the ingredients. Cook a few minutes to blend. Put in jars and seal. Makes 12 quarts.
