SPAGHETTI SAUCE Recipe

  Italian Sauces

Ingredients:
1/2 Bushel of tomatoes
1 Pt. oil Olive oil preferred
3 Pounds of onions
2 Garlick buds
8 Cans of tomato paste 6 oz. size
4 Hot peppers
1 1/2 Cup of sugar
1/2 Cup of salt
1 Tbsp. sweet basil
2 Tbsp. ooregano ( heaping)

Directions:
Grind the peppers and onions. Cook 1/2 hr. in oil.
Cook tomatoes and garlick as for juice. Tomatoes can be scalded and pealed for easy making. Put through a sieve or foley mill. Add the peppers and the oniond to the juice and the rest of the ingredients. Cook a few minutes to blend. Put in jars and seal. Makes 12 quarts.
Additional spices or things like mushrooms can be added as well as the peppers and onions.
