Almost any fish can be prepared with this recipe. The type of oil used is your choice. I prefer peanut oil. Nice served with pickled cucumber. My family rates this one Four Stars. Enjoy...

Ingredients

  • 1 rockfish or grouper (about 2 pounds)
  • Mixture#1:
  • 1 T. cooking Sherry
  • 1 t. salt
  • oil to deep fry plus 4 T.
  • Mixture#2:
  • 1/2 cup chopped green onions
  • 1 T. each- chopped ginger root,chopped garlic
  • Mixture#3:
  • 3 T. ketchup
  • 1 t. hot bean paste
  • Mixture#4:
  • 3/4 cup water
  • 1 T. each- sugar, cooking sherry, sesame oil
  • 1/2 T. cornstarch
  • 3/4 t. salt

Directions

Clean the fish and make a few small deep cuts on the thick part of the fish. Marinate the fish in #1 for 10 minutes. Combine, in separate bowls, #'s 2,3 & 4.
Heat a wok then add oil. Remove the fish from the marinade and deep- fry it until golden brown; remove and keep warm on a serving plate. Remove the oil. Reheat the wok, add 4 T. oil. Stir fry #2 and #3 until fragrant. Add #4; stir until liquid thickens. Pour over fish and serve hot.
