Ingredients

  • 1 lb.( 3 cups minced beef suet)
  • 1 lb. (3 1/2 cups cooked and finely diced beef)
  • 1 lb.( 3 cups seedless raisins)
  • 1 lb.( 3 cups washed currants and sultanas
  • 1 lb.( 4 cups peeled and chopped apples)
  • 5 oz.( 1 cup finely diced candied citron)
  • 4 oz.(3/4 cup chopped candied orange peel
  • The chopped rind and juice of one orange
  • 1 lb.( 2 cups soft light brown sugar
  • 1 oz.(1/4 cup mixed spices-cinnamon, clove, nutmeg and mace)
  • 2 1/2 tsp. salt
  • 1/2 bottle of Brandy
  • 6 Tbls.( scant 1/2 cup rum)
  • 6 Tbls.( scant 1/2 cup Madeira)

Directions

Put all ingredients into a large bowl mix thoroughly. Leave the mixture to steep for 1 month in a cool place. Stir every 8 days.
