Chang Kung is the Chinese God who watches over your wok.
Ingredients
- 3 cups(raw) flat egg noodles, cooked in salted water;drained
- 3 stalks broccoli, thinly sliced
- 1 large onion, sliced
- 1/2 lb. fresh mushrooms, sliced
- 1 lb. fresh mung bean sprouts
- 1/2 cup each-sliced water chestnuts& bamboo shoots
- 1/2 lb. Tofu, cut into small chunks (about 3 cakes)
- 2 Tbs. sesame oil
- 3 Tbs. safflower oil
- 1/4 cup sherry
- 1/4 cup tamari
- 1/2 tsp. freshly grated ginger
- 1/2 tsp. dry mustard
- Optional:
- minced garlic sauteed
- black mushrooms, softened in boiling water, sliced and sauteed
- extra vegetables
- Optional toppings:
- toasted sesames and cashews
- chopped scallions
- green peppers
Directions
Saute onions, broccoli,ginger and mushrooms in safflower oil until tender. Add remaining ingredients; toss to mix and heat thoroughly. Top with optional toppings if using.
