Ode to Chang Kung Recipe

  Chinese Vegetable

Ingredients:
3 cups(raw) flat egg noodles, cooked in salted water;drained
3 stalks broccoli, thinly sliced
1 large onion, sliced
1/2 lb. fresh mushrooms, sliced
1 lb. fresh mung bean sprouts
1/2 cup each-sliced water chestnuts& bamboo shoots
1/2 lb. Tofu, cut into small chunks (about 3 cakes)
2 Tbs. sesame oil
3 Tbs. safflower oil
1/4 cup sherry
1/4 cup tamari
1/2 tsp. freshly grated ginger
1/2 tsp. dry mustard
Optional:
minced garlic sauteed
black mushrooms, softened in boiling water, sliced and sauteed
extra vegetables
Optional toppings:
toasted sesames and cashews
chopped scallions
green peppers

Directions:
Saute onions, broccoli,ginger and mushrooms in safflower oil until tender. Add remaining ingredients; toss to mix and heat thoroughly. Top with optional toppings if using.
