I serve these with tzadziki for a dip.

Ingredients

  • 4 small zucchini
  • 1 cup flour
  • 1/2 teaspoon salt
  • dash of black pepper
  • 1 egg beaten with 2 tablespoons water
  • 1 1/2 cups dry bread crumbd
  • Oil for deep frying

Directions

Cut ends off zucchini, cut in half, then into sticks. Lay cut zucchini between 2 layers of paper towel while you prepare remaining ingredients. Season flour with salt and pepper, put on wax paper, egg mixture in a bowl and bread crumbs on another piece of wax paper. Roll zucchini in flour, dip in egg, letting excess drop back into bowl, then roll in crumbs; let rest a few minutes. Heat oil to 375 degrees, fry zucchini, in batches, until golden brown. Drain on paper towels.
