use more feta than parm. use white wine, you may want to partially cook the mushrooms before stuffing and baking so as not to over cook or burn stuffing.
Ingredients
- portabella mushrooms
- feta cheese
- parm. cheese grated
- olive oil
- fresh spinach chopped (pureed)
- bread crumbs (seasoned)
- wine
- salt & pepper to taste
- melted butter
Directions
destem mushrooms (save the stems they taste great used
soups)
mix all the other ingredients to moisten and stuff your shrooms.
