Vinegar keeps well for about 4 months

Ingredients

  • 4 Bay leaves
  • 6 small dried hot red chiles
  • 4 large cloves garlic, peeled
  • red or white wine vinegar
  • 3- 3/1/2 cup bottle with a tight fitting screw top, stopper or cork

Directions

Poke into a bottle the bay leaves, chiles and garlic. Fill with vinegar. Leave an inch free at the top if you plan to insert a cork or stopper. Let the bottle stand undisturbed in a cool, dark place for at least 3 weeks so flavors can develop.


Makes about 3 1/2 cups
