Fresh crab roe is only available in spring sothis is seaonal. Bon Appetit

Ingredients

  • 3 Tbs. butter/marg.
  • 1-2 stalks celery diced
  • 1-2 scallions chopped
  • 2-3 Tbs. flour to thicken may need a little more.
  • 2 C.fish stock or clam juice
  • 2 C.milk
  • 2 C heavy Crm.
  • 1 1/2-2 lb. chunked/lumped crabmeat
  • 6-8 oz fresh crab roe
  • 1/4 C dry sherry
  • sal & pepper to taste
  • old bay seasoning

Directions

In lg.pot melt butter/marg. add celery & scallon saute til soft not brown ( i also used to saute shallots & garlic to taste with this.Stir in the flour 2 min or so. Add stock or clam juice, milk and cream. Bring to simmer stirring.(you might add more flour to thicken)
Add worstershire sauce to taste ( I think that & the roe make this dish) Add crab meat, roe sherry, salt & pepper simmer some more.
Serve topped w/ a dash or two of old bay anda slice (thin) of lemon, and a sprinle of parslet or cilantro.
