Ingredients
- 1 lb. raw bay scallops
- 4-6 oz.fresh lime juice
- 2 serrano peppers minced ( red,green,
- or yellow peppers fine diced may be
- substituted Add nice color)
- 2 Tbs.fresh cilantro chopped
- Optional 1 Tbs.olive oil
- 4 oz. tomato cncass'ee (peeled,seede d,
- & diced)
- 1 tsp.garlic minced or chopped
- salt & pepper TT (to taste)
Directions
In a stainless steel, plastic, or glass container mix
all ingredients. Cover, and marinate in refrigerator 4
hours or overnight. Stir to blend flavors every so
often.
