cot root vegetables into wedges microwave till tender then roast in oven with olive oil and rosemary
season beef
seal whole fillet in a smoking pan oven roast till done to your liking
set aside in warm place cover with foil
pour fat of baking dish deglaze with red wine and beef stock reduce adjust seasoning strain

place onion on plate slice beef place on onionstack roasted veg on the plate to form a tower
drisle sayce over meat and serve
