  • Ingredients:
  • pistachios - crushed or chopped finely.
  • sword fish - fresh 4 oz.- app. or 6 oz. entree.
  • eggs - whisked together.
  • Salt and Pepper - to taste
  • flour
  • oil
  • Equipment:
  • 5 trays: 1)chopped pistachios, 2)egg mix, 3)flour, 4)finished product, 5)beginning product.
  • parchment paper - separate the individual servings on the final tray
  • mixing bowl and whisk - whisking eggs
  • small cup - salt and pepper mix
  • skillet
  • oven at 350 degrees

Directions

Method:
1. Clean and Sanitize all equipment.
2. Clean and portion swordfish to needed amounts on a tray.
3. Dredge the swordfish in the flour lightly
4. Gently swill in the egg mix for a light coating.
5. Remove and place into pistachio mix and pat lightly until crushed nuts adhere to the swordfish.
6. Place neatly onto parchment for individual serving.
7. Sear on a pan using little oil and finish off in oven til done.
8. Plate up and garnish.
9. Serve.
