Ingredients

  • 2 lg.onions (about 1 3/4 lb.), halved and thinly sliced
  • 1/4 cup butter, melted
  • 3 tbsp. flour
  • 4 cups chicken broth
  • 1 cup half and half
  • 1 cup shredded Cheddar cheese
  • 1 tbsp. chopped green bell pepper
  • 1/4 tsp. white pepper

Directions

Saute onion in butter until tender; add flour, stirring until smooth. Cook 1 minute.
Gradually add chicken broth, simmer, uncovered, for 30 minutes. Stir often.
Add half and half and remaining ingredients. Cook until cheese melts and soup is heated.


Makes 7 cups.
