Ingredients

  • 1 lb. fresh spinach
  • 1 sm. onion, diced
  • 1 tbsp. butter, melted
  • 3 slices bacon
  • 1 tbsp. butter, melted
  • 1 tbsp. flour
  • 1 cup half and half
  • 1/8 tsp. salt
  • Pinch of nutmeg

Directions

Stem and wash spinach. Cook 3-5 minutes, drain well, chop and set aside.
Saute onion in 1 tbsp. butter for 3-5 minutes. Set aside.
Cook bacon until crisp; reserve 1 tsp. bacon fat. Chop bacon and set aside.
Combine bacon fat and 1 tbsp. butter in a heavy saucepan over low heat; add flour, stirring constantly.
Gradually add the half and half; cook over medium heat, stirring constantly, until mixture is thickened and bubbly. Add salt, nutmeg, spinach, and onion, stirring well.
Serve immediately.


Serves 3 to 4.
