Creamed Spinach Recipe | |

Ingredients:
1 lb. fresh spinach1 sm. onion, diced 1 tbsp. butter, melted 3 slices bacon 1 tbsp. butter, melted 1 tbsp. flour 1 cup half and half 1/8 tsp. salt Pinch of nutmeg
Directions:
Stem and wash spinach. Cook 3-5 minutes, drain well, chop and set aside.Saute onion in 1 tbsp. butter for 3-5 minutes. Set aside. Cook bacon until crisp; reserve 1 tsp. bacon fat. Chop bacon and set aside. Combine bacon fat and 1 tbsp. butter in a heavy saucepan over low heat; add flour, stirring constantly. Gradually add the half and half; cook over medium heat, stirring constantly, until mixture is thickened and bubbly. Add salt, nutmeg, spinach, and onion, stirring well. Serve immediately. Serves 3 to 4.
