Ingredients

  • 4 cups cooked rice
  • 4 tbsp. peanut oil
  • 4 greens onions with green tops, chopped
  • 1 cup sliced mushrooms
  • 4 tbsp. soy sauce
  • 1 small can water chestnuts, drained and rinsed
  • 2 cups cooked and cubed pork
  • 2 eggs, slightly beaten

Directions

Heat oil in skillet until sizzling. Add onions and mushrooms. Saute until just tender. Stir in cooked rice, waterchestnuts and soy sauce. Continue to cook for 2-3 minutes, stirring constantly. Lower heat and mix in eggs. Continue stirring. Add pork and heat through, about 2 minutes. Serve.


Serves 6.
