Ingredients
- 4 cups cooked rice
- 4 tbsp. peanut oil
- 4 greens onions with green tops, chopped
- 1 cup sliced mushrooms
- 4 tbsp. soy sauce
- 1 small can water chestnuts, drained and rinsed
- 2 cups cooked and cubed pork
- 2 eggs, slightly beaten
Directions
Heat oil in skillet until sizzling. Add onions and mushrooms. Saute until just tender. Stir in cooked rice, waterchestnuts and soy sauce. Continue to cook for 2-3 minutes, stirring constantly. Lower heat and mix in eggs. Continue stirring. Add pork and heat through, about 2 minutes. Serve.
Serves 6.
