Ingredients

  • 1 eggplant, peeled, cut into 1/2-inch cubes
  • 3 zucchini, cut into 1/2-inch slices
  • 1 medium onion,sliced
  • 1 can tomatoes, chopped
  • 1 large green bell pepper, seeded and chopped into 1/2" pieces
  • 1 large yellow bell pepper, seeded and chopped into 1/2" pieces
  • 1 jalapeno pepper, seeded and finely chopped
  • 1 Tbsp. chopped fresh basil
  • 1/4 tsp. salt
  • 1 Tbsp. minced parsley
  • 1/2 lb. smoked link sausage, thinly sliced
  • 2 cups chicken broth or bouillon

Directions

Combine all ingredients in a slow cooker. Cover and cook on Low 4 to 6 hours.


Makes 7 to 8 servings.
