Provencale Smoked Sausage Ratatouille Recipe

Ingredients:
1 eggplant, peeled, cut into 1/2-inch cubes
3 zucchini, cut into 1/2-inch slices
1 medium onion,sliced
1 can tomatoes, chopped
1 large green bell pepper, seeded and chopped into 1/2" pieces
1 large yellow bell pepper, seeded and chopped into 1/2" pieces
1 jalapeno pepper, seeded and finely chopped
1 Tbsp. chopped fresh basil
1/4 tsp. salt
1 Tbsp. minced parsley
1/2 lb. smoked link sausage, thinly sliced
2 cups chicken broth or bouillon

Directions:
Combine all ingredients in a slow cooker. Cover and cook on Low 4 to 6 hours.
Makes 7 to 8 servings.
