This can be prepared a day ahead, covered and refrigerated. Reheat in 350 degree oven for about 30 minutes.


  • 5 pounds sweet potatoes
  • 1/4 cup butter
  • 3 tablespoons honey
  • 2 teaspoons grated fresh ginger
  • Salt and pepper, to taste
  • Candied ginger, optional for garnish


Preheat oven to 400 degrees. Pierce each sweet potato several times with a fork and place on a foil lined baking dish. Bake about 45 minutes or until very soft. Let stand until cool enough to handle, then cut in half and scoop out pulp. Place in a large bowl, add remaining ingredients except candied ginger and mash with a potato masher until smooth. Put into a buttered casserole dish suitable for serving. Reheat at 350 degrees until heated through. If desired, garnish with slivered candied ginger.
