Ingredients

  • 2 eggs
  • 1/2 cup cooking oil
  • 1 cup sugar
  • 1 cup grated zucchini, unpeeled
  • 1 tsp. vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tsp. cinnamon

Directions

In a mixing bowl, beat eggs until frothy. Beat in oil and sugar. Add zucchini. Stir in vanilla. In a separate bowl, put remaining five dry ingredients. Stir well and pour this into the zucchini mixture. Stir to moisten. Pour into greased loaf pan. Bake for 50 - 60 minutes at 350F (180C) until a toothpick inserted in the centre comes out clean. Let stand 10 minutes. Remove from pan. Cool on rack. Yield: 1 loaf.
