This is my 86 yr. old Arkansas mothers recipe. She has been making it for at least 70 yrs. It is good & moist.
Ingredients
- 1 cup cornmeal
- 1/2 cup flour
- 2 tsp. baking powder
- 3/4 tsp. baking soda
- 1/2 tsp. salt
- 1 egg
- buttermilk - about 1 cup
- (no sugar if you are from the south)
Directions
Put dry ingredients into a bowl. Break the egg into this and put in enough buttermilk to make batter about like cake batter.
Pour into a well greased Iron Skillet and bake in a 450 degree oven for 15 min. or until done. (6 inch skillet)
