Ingredients
- 1 tbsp olive oil
- 1 onion, chopped finely
- 2 garlic cloves, chopped finely
- 1 can Roma tomatoes (or use fresh)
- 2 tbsp. tomato paste
- 1/3 c vodka
- 1 tsp sugar
- pinch of cayenne pepper
- freshly ground pepper
- salt
- 1 # penne
- 1/3 c cream
- 2 tbsp parmesan cheese
Directions
Heat oil in saucepan and sauti onion and garlic for a few minutes without browning. Add tomatoes (slightly crushed with spoon) plus liquid from can. Add tomato paste, vodka, sugar, cayenne pepper, pepper and salt and let simmer (covered) for 15-20 minutes. Stir now and then. Cook pasta until al dente, drain and put in a bowl. Add cream and parmesan cheese to sauce, stir to combine and heat but do not boil. Pour over pasta and serve.
