Penne with Vodka and Tomato Sauce Recipe | |

Ingredients:
1 tbsp olive oil1 onion, chopped finely 2 garlic cloves, chopped finely 1 can Roma tomatoes (or use fresh) 2 tbsp. tomato paste 1/3 c vodka 1 tsp sugar pinch of cayenne pepper freshly ground pepper salt 1 # penne 1/3 c cream 2 tbsp parmesan cheese
Directions:
Heat oil in saucepan and sauti onion and garlic for a few minutes without browning. Add tomatoes (slightly crushed with spoon) plus liquid from can. Add tomato paste, vodka, sugar, cayenne pepper, pepper and salt and let simmer (covered) for 15-20 minutes. Stir now and then. Cook pasta until al dente, drain and put in a bowl. Add cream and parmesan cheese to sauce, stir to combine and heat but do not boil. Pour over pasta and serve. |
