By increasing/decreasing the onion and garlic, this soup can be either tame or truly robust.

Ingredients

  • 1 Tbsp Oil
  • 8 oz Mushrooms, sliced
  • 1 med Onion, diced
  • 1 med Red Bell Pepper, diced
  • 3-4 cloves Garlic
  • 6 cups Chicken Broth
  • 1/2 cup pearled Barley
  • 1/4 cup wild rice
  • 2 tsp dijon Mustard
  • 1 Tbsp dried Parsley
  • 1 tsp Thyme
  • 1 tsp Salt
  • 1/2 tsp Pepper

Directions

In large sauce pan, heat oil over medium heat. Add mushrooms, onion, bell pepper and garlic. Cook for 8-10 minutes, stirring frequently.

Add broth, barley, rice, mustard and seasonings. Bring to a simmer, then cook uncovered for 50-60 minutes, stirring occasionally.

Remove from heat and let stand 10 minutes before serving
