Barley, Mushroom & Wild Rice Soup Recipe | |

Ingredients:
1 Tbsp Oil8 oz Mushrooms, sliced 1 med Onion, diced 1 med Red Bell Pepper, diced 3-4 cloves Garlic 6 cups Chicken Broth 1/2 cup pearled Barley 1/4 cup wild rice 2 tsp dijon Mustard 1 Tbsp dried Parsley 1 tsp Thyme 1 tsp Salt 1/2 tsp Pepper
Directions:
In large sauce pan, heat oil over medium heat. Add mushrooms, onion, bell pepper and garlic. Cook for 8-10 minutes, stirring frequently.Add broth, barley, rice, mustard and seasonings. Bring to a simmer, then cook uncovered for 50-60 minutes, stirring occasionally. Remove from heat and let stand 10 minutes before serving By increasing/decreasing the onion and garlic, this soup can be either tame or truly robust.
