Ingredients

  • 1 salmon boned and sknined
  • 2/3cup kosher salt
  • 4 tbs sugar
  • 4 tbs dry dill weed

Directions

for two 2-2 1/2 LB sides
rub each side of salmon with 1/3 cup slat and 2 tbs. sugar sprinkle with 2 tbs. dill wrap in foil place on pan and cover with another pan and place 4 #10 can on top keep in refrigerator for 72 hours turning every twelve hours.

peppercorns fresh herb , tarragon basil, add vodka to recipe
