Ingredients

  • 3 (8 oz.)pkgs cream cheese
  • 1 tsp. vanilla
  • 8 oz. sour cream
  • 1/2 Cup sugar
  • 2 eggs
  • 20 graham crackers (crushed)
  • 2 TBS. sugar
  • 1 stick butter
  • 2 TBS. sugar
  • 1 1/2 tsp. cinnamon
  • 8oz. sour cream

Directions

Beat cream cheese, vanilla, 8oz. sour cream, eggs, and 1/2 cup sugar well. Prepare crust by crushing graham crackers and mixing with melted butter and 2 tablespoons sugar into a 9inch springform pan. Pour cheesecake mixture into crust. Bake at 375 degrees for 20 minutes. Remove from oven and let cool for 10 minutes. Beat 8oz. sour cream, 2 tablespoons sugar and cinnamon well and spread on top of cake after it has cooled. Place back into oven and bake at 475 degrees for 5 more minutes. Let cool, refrigerate before serving.
