Ingredients
- Rub:
- In a small bowl, combine:
- 1/4 cup kosher salt
- 2 Tbs. ground black pepper
- 2 Tbs. granulated garlic
- 2 Tbs. cayene pepper
- 2 Tbs. cumin seeds, lightly crushed
- Rub:
- 1/4 cup packed light brown sugar
- 1/4 cup sugar
- 1/4 cup seasoned salt
- 2 Tbs garlic salt
- 1 Tbs. onion salt
- 1.1.2 tsp. celery alt
- 1/4 cup sweet Hungarian paprika
- 1 Tbs. freshly ground black pepper
- 1 1/2 tsp. rubbed dried sage
- 1/ 2 tsp. ground allspice
- 1/4 tsp. cayenne
- Pinch ground cloves
- To make the rub- Spread the light brown sugar on a baking sheet and let it dry out for an hour or two to keep it from clumping. Sift the brown sugar and the remaining tub ingredients together in a bowl; you may have to do this in batches. Stir to combne. (Alternatively, put the ingredients in the food processor and puse to combine
- Rub:
- 5 Tbs. whole cardamom seeds
- 1 Tbs. powdered cinnamon
- 7 whole clovs
- 1 Tbs. finely minced dried chile of your choice
- 3 Tbs. coriander seeds
- 1/4 cup cumin seeds
- 1 Tbs. turmeric
- 2 Tbs. whole black pepercorns
- 1 Tbs. whole white peppercorns
- In a large sauce pan, combine all ingredients and cook over medium low heat, shaking frequently, until the mixture begins to take on a darker color, about 4 to 6 minutes
- Remove from heat, allow to cool to room temperature, then grind in a spice blender, coffee grinder, or blender. This will maintain its potency for about 6 weeks if stored in an airtight container in a cool,dark place.
