Great with coffee butter cream and ganash.
Ingredients
- Almond Meal 3 lb 12 oz
- Granulated Sugar 3 lb 12 oz
- Eggs 2 qts
- Egg Whites 1 1/2 qts
- Cake Flour 1 lb 5 oz
Directions
Whip the eggs and the sugar on high speed 5 minutes. in three batches each fold in the cake flour and almond meal. Whip the whites stiff but not dry and fold in to batter.
8 sheet pans should be well buttered and sugared. Bake at 375, 9 minutes.
