Ingredients:
Almond Meal 3 lb 12 oz Granulated Sugar 3 lb 12 oz Eggs 2 qts Egg Whites 1 1/2 qts Cake Flour 1 lb 5 oz
Directions:
Whip the eggs and the sugar on high speed 5 minutes. in three batches each fold in the cake flour and almond meal. Whip the whites stiff but not dry and fold in to batter.8 sheet pans should be well buttered and sugared. Bake at 375, 9 minutes. Great with coffee butter cream and ganash.
