Ingredients
- 1/2 c. butter or margarine, softened
- 1 1/2 c. sugar
- 2 large eggs
- 2 c. mashed banana
- 1/4 c. light rum
- 1 tsp. vanilla extract
- 1 1/2 c. flour
- 3/4 c. cornmeal
- 1 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/2 c. flour
- /3 c. chopped pecans
- 1/4 c. firmly packed broown sugar
- 1/4 c. butter or margarine, melted
Directions
Beat butter at med. speed with elec. mixer until creamy; gradually add sugar, beating well. Add eggs, one at a time, beating after each. Stir in banana, rum & vanilla. Combine 1 1/2 c. flour & next 4 ingredients; add to butter mix, mixing until blended. Pour into a greased & floured 10" tube pan; set aside.
Combine 1/2 c. flour & remaining ingredients; sprinkle over batter. Bake at 350 for 55 minutes or until a wooden pick comes out clean.
Cool in pan on a wire rack 10 to 15 minutes; remove from pan, and let cook completely on rack.
