I like to prebake the pie shell about 5 minutes to prevent soggy crust. You can substitute Walla's if you can't get Vidalias.

Ingredients

  • Since I live in the South I think Vidalia's are as good or BETTER than Walla Walla's. However that's another story:
  • 4 medium thinly sliced Vidalia's (or Walla's, if you insist)
  • 1 stick butter
  • 3 eggs, beaten
  • 1 c. sour cream
  • 1/4 tsp. salt
  • 1/2 tsp. pepper
  • Dash Tabasco
  • 1 pie shell, unbaked

Directions

Saute onions in butter. Combine eggs & sour cream & add to onion mixture. Add seasonings & pour into pie shell, then sprinkle with cheese. Bake at 450 for 20 minutes, reduce heat to 325 and continue baking another 20 minutes. Serves 6.
