Ingredients

  • 2 cups flour
  • 1 cup sugar
  • 1 teaspoon salt
  • 1/2 cup yogurt or sour cream
  • 1/4 cup melted butter
  • 2 teaspoons grated lemon peel
  • 1 cup shredded zucchini
  • 1/2 chopped nuts, your choice
  • 1/2 cup powdered sugar
  • juice of one lemon

Directions

Preheat oven to 350.Mix flour,sugar,baking soda,and salt together in a bowl.Add yougurt or sour cream,butter,1 tablespoon lemon peel,and shredded zucchini.Mix until well blended.Stir in nuts. Pour into greased 9-in. square pan or loaf pan.Bake 35-40 min.for square pan or 45-50 min. for loaf pan.While bread is baking, mix powdered sugar,lemon juice,and remaining 1 tablespoon of grated lemon peel to form glaze.While loaf is still warm, puncture with fork and frost with glaze.


Makes one loaf.
