Ingredients
- 1/4 C. butter
- 1/2 C, sugar
- 2 egg yolks
- 1/2 tsp,. vanilla
- 1 C. flour
- 1 1/2 tsp. baking soda
- 1.4 tsp. salt
- 1/2 C. milk
- 2 egg whites
- 1 tsp. vanilla
- 1/2 C. sugar
- 1/3 C. chopped pecans
- 1 C. whipping cream
- 1 tsp. vanilla
- 2 tbsp. powdered sugar
- 8 oz. crushed pineapple
Directions
Beat sugar and butter for 2 minutes. Ad and beat till light and fluffy the egg yolks and vanilla. Add the flour, baking soda,.salt, and milk. Spread into 2 greased and floured round cake pans.
Whip together the egg whites ,vanilla and 1/2 C. sugar. Spread on unbaked cake. Top with chopped pecans, pressing the pecans into the meringue. Bake at 350* for 30 minutes. Cool in pans for 10 minutes.
Whip the cream , vanilla and powdered sugar. Stir in the drained pineapple. Layer the cake with the whipped layers. The end layer will be one of whipped cream.
