My sister-in-law served this at a brunch for out-of-towners the day after her son's wedding. A big hit!

Ingredients

  • 12 eggs, well beaten
  • 9 sices white bread, crusts removed, cut into 1/2" squares
  • 4 T. butter, cut in small cubes
  • 3 c. milk
  • 6 scallions, chopped, including green tops
  • 1/4 c. chopped green bell pepper
  • 2 T chopped pimiento
  • 2 lbs. pork sausage, browned, drained and crumbled
  • 2 c. grated cheddar cheese
  • 1 tsp. salt
  • 1/4 tsp. pepper

Directions

Combine all the ingredients in a large bowl and blend well. Pour the egg mixture into a 9 x 13 casserole dish and refrigerate, covered, for 8 hrs. or overnight.

Bake the eggs in a pre-heated 300 degree oven for 1 hr., uncovered.
