Adjust amounts for quantity of fish you are marinating. Cut in half for one serving.

Ingredients

  • 1/4 cup Olive Oil
  • 1/4 cup Dry Vermouth or white wine
  • 1/4 cup Lime or Lemon Juice
  • 2 cloves crushed garlic
  • 1 tsp. dried basil leaves
  • 1 tsp. ground black pepper
  • Hot Sauce or Ground Cayenne Pepper (Optional

Directions

Combine ingredients in China or Glass casserole, or flat dish. Marinate fish (turning occasionally) or as long as possible before grilling. Place fish on pre-heated charcoal or gas grill. Baste with additional marinade during cooking. Cook (depending on thickness) approximately 8 minutes on first side, then 5 minutes on second side over medium-hot fire, uncovered.
