Ingredients

  • Turkey giblets
  • 1/2 cup butter or margarine
  • 1 cup finely chopped celery
  • 2 medium-sized onions, finely chopped
  • 2 lbs. bread
  • 1 1/2 tsp. salt
  • 1 Tbsp. poultry seasoning
  • 1 tsp. sage
  • 1/2 tsp. pepper
  • 3 eggs, beaten
  • 1/2 cup chopped parsley
  • 1/2 lb. pork sausage

Directions

Cook giblets in water until done. Drain giblets, reserving 1 cup liquid. Chop giblets fine and set aside. Melt butter in a skillet; add celery and onions and cook until tender. Remove from heat. Cut bread into cubes(you should have 21 cups bread cubes); place bread cubes in a large bowl with salt, poultry seasoning, sage and pepper. Add celery mixture to bread. Add beaten eggs, reserved giblet liquid and parsley. Add sausage and giblets. Toss lightly with a fork until all ingredients are well blended. Place inside a 15-18 pound turkey and bake, or place in a baking pan and bake until golden brown.
