Ingredients:
Turkey giblets1/2 cup butter or margarine 1 cup finely chopped celery 2 medium-sized onions, finely chopped 2 lbs. bread 1 1/2 tsp. salt 1 Tbsp. poultry seasoning 1 tsp. sage 1/2 tsp. pepper 3 eggs, beaten 1/2 cup chopped parsley 1/2 lb. pork sausage
Directions:
Cook giblets in water until done. Drain giblets, reserving 1 cup liquid. Chop giblets fine and set aside. Melt butter in a skillet; add celery and onions and cook until tender. Remove from heat. Cut bread into cubes(you should have 21 cups bread cubes); place bread cubes in a large bowl with salt, poultry seasoning, sage and pepper. Add celery mixture to bread. Add beaten eggs, reserved giblet liquid and parsley. Add sausage and giblets. Toss lightly with a fork until all ingredients are well blended. Place inside a 15-18 pound turkey and bake, or place in a baking pan and bake until golden brown. |
