Mashed Potatoes with (Homemade) Horseradish Recipe

Ingredients:

  • Homemade Horseradish
  • 1 cup cubed peeled horseradish root(1/2-in. pieces)
  • 3/4 cup vinegar
  • 2 tsp. sugar
  • 1/4 tsp. salt
  • Mashed Potatoes with Horseradish
  • 6 medium potatoes, peeled and cubed
  • 1/4 cup butter or margarine, melted
  • 3/4 tsp. salt
  • 1/8 tsp. pepper
  • 1/2 cup sour cream
  • 2 Tbsp. prepared horseradish

Directions:
Horseradish:
Combine all ingredients in a food processor or blender; process until pureed. Carefully remove cover of processor or blender, keeping face away from container. Cover and store in the refrigerator. Use as a condiment or in Mashed Potatoes with Horseradish.

Mashed Potatoes with Horseradish:
Cook the potaotes in boiling salted water until tender, about 8-10 minutes; drain. Add butter, salt and pepper. Whip with an electric mixer on low speed or mash with a potato masher. Add sour cream and horseradish; mix well. Serve immediately. Yield: 6-8 servings.
