Directions:
Horseradish: Combine all ingredients in a food processor or blender; process until pureed. Carefully remove cover of processor or blender, keeping face away from container. Cover and store in the refrigerator. Use as a condiment or in Mashed Potatoes with Horseradish. Mashed Potatoes with Horseradish: Cook the potaotes in boiling salted water until tender, about 8-10 minutes; drain. Add butter, salt and pepper. Whip with an electric mixer on low speed or mash with a potato masher. Add sour cream and horseradish; mix well. Serve immediately. Yield: 6-8 servings.
