Mashed Potatoes with (Homemade) Horseradish Recipe | |

Ingredients:
Homemade Horseradish1 cup cubed peeled horseradish root(1/2-in. pieces) 3/4 cup vinegar 2 tsp. sugar 1/4 tsp. salt Mashed Potatoes with Horseradish 6 medium potatoes, peeled and cubed 1/4 cup butter or margarine, melted 3/4 tsp. salt 1/8 tsp. pepper 1/2 cup sour cream 2 Tbsp. prepared horseradish
Directions:
Horseradish:Combine all ingredients in a food processor or blender; process until pureed. Carefully remove cover of processor or blender, keeping face away from container. Cover and store in the refrigerator. Use as a condiment or in Mashed Potatoes with Horseradish. Mashed Potatoes with Horseradish: Cook the potaotes in boiling salted water until tender, about 8-10 minutes; drain. Add butter, salt and pepper. Whip with an electric mixer on low speed or mash with a potato masher. Add sour cream and horseradish; mix well. Serve immediately. Yield: 6-8 servings. |
