this is very quick and the left over roast beef is delicious the next day if you shred it into egg noodles
Ingredients
- 2 lb thinly sliced deli style italian roast beef
- 2 cans beef broth
- oregano
- garlic (fresh or canned)
- basil
- crushed red pepper
- bay leaf
- french bread rolls
- cheez whiz (optional)
Directions
combine the beef broth (add 2 cans water), oregano, garlic, basil, oregano, red peppers, and bay leaf in a 5 qrt sauce pan and bring to boiling; simmer about 5 minutes.
Add roast beef to broth mixture; simmer between 15-20 minutes (until meat is very tender)
serve on french bread rolls, with extra au jus on the side. I top with cheez whiz.
makes about 8-10 sandwiches, depending on how big the sandwiches are
