• 1 pound vermicelli
  • 3 tablespoons butter
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • 1 clove garlic, peeled and minced
  • 2 boneless chicken breasts, cut into thin strips
  • 3/4 cup tomato sauce
  • 3/4 cup chicken broth
  • Salt and pepper to taste
  • 2 cups broccoli florets
  • 1 cup sliced zucchini
  • 2 carrots, sliced
  • 1 red pepper, seeded and sliced


1. Cook vermicelli in boiling, salted water following package directions; drain. Toss with butter and Parmesan cheese. 2. While vermicelli is cooking, heat oil in saucepan. Add garlic and chicken; saute until browned. Add all remaining ingredients, mixing well. Simmer for 10 minutes, stirring occasionally. 3. Place vermicelli in heated serving bowl. Spoon chicken on top, and serve at once.
